The Preuses vines are located in the northern part of the Grand Cru area where the south-easterly aspect ensures morning sun. The available soil is shallow, producing a subtle and delicate wine with a light yellow colour.
On the nose there are floral, smoky and mineral aromas. Once aged there is also a flinty aroma, as well as notes of spices, pollen and honey. Finesse, delicacy and minerality characterise this wine. Initially it is gentle in the mouth, but later becomes stronger and then maintains this strength.

The stunning nose of ripe orange and apricot, without any hint of opulence, pulls you into this concentrated and beautifully balanced Chablis Grand Cru. Just a touch of oak. The mineral acidity gives this so much energy and brightness. Very long finish with the noble austerity that makes us love these wines.

The 2020 Chablis Les Preuses Grand Cru has a finely-tuned bouquet with touches of fennel and broom, quite tertiary in style compared to its peers. The palate is well balanced with a fine bead of acidity, taut and fresh with a saline entry, building nicely in the mouth and fanning out towards the finish. There is a sense of harmony pervading this Les Preuses, and I appreciate the manner in which the mouth tingles after exit. By far the best recent release from Simmonet-Febvre.
